Gluten-free Pumpkin Cookies

Ingredients:

  • 1/4 cup of olive oil
  • 1 cup pumpkin
  • 1 tsp. vanilla
  • 2 1/2 cup oat flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. cream of tartar
  • 1/4 cup sucanat or brown sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/4 tsp. ginger
  • Add walnuts, coconut or chocolate/carob chips if desired.

Directions:

  1. Preheat oven to 375 degrees F.
  2. Beat together the olive oil, pumpkin, and vanilla.
  3. In a seperate bowl combine the rest of the indredients. Add the dry ingredients to the wet. Add walnuts, coconut, or chocolate chips if desired. Drop by tablespoon onto a cookie sheet and put in the oven. Bake for 12 minutes.

Notes:
*Adding ground cloves is also an option for more flavor.
