Add walnuts, coconut or chocolate/carob chips if desired.
Directions:
Preheat oven to 375 degrees F.
Beat together the olive oil, pumpkin, and vanilla.
In a seperate bowl combine the rest of the indredients. Add the dry ingredients to the wet. Add walnuts, coconut, or chocolate chips if desired. Drop by tablespoon onto a cookie sheet and put in the oven. Bake for 12 minutes.
Notes:
*Adding ground cloves is also an option for more flavor.
