Seasoned Sweet Potatoes and Kale

Ingredients:

  • 2 tbls. Extra Virgin Olive Oil
  • 1 tsp. minced fresh ginger
  • 1 generous cup peeled and diced sweet potato or yams
  • 1/4 tsp. cinnamon
  • 1/2 cup borth
  • a few bunches of chopped kale
  • 1/4 tsp. salt
  • 2-3 tbls. golden raisins
  • 1/2 tsp. maple syrup
  • 2 tbls ground pecans

Directions:

  1. Heat the oil and add ginger. Saute for 30 seconds until aromatic. Add sweet potato, cinnamon, and broth and saute for about 1 minute. Add the kale, salt, and raisins and saute until kale is a darker shade of green and the sweet potatoes are tender, about 5 minutes. Stir in maple syrup. Serve garnished with ground pecans.
