1 generous cup peeled and diced sweet potato or yams
1/4 tsp. cinnamon
1/2 cup borth
a few bunches of chopped kale
1/4 tsp. salt
2-3 tbls. golden raisins
1/2 tsp. maple syrup
2 tbls ground pecans
Directions:
Heat the oil and add ginger. Saute for 30 seconds until aromatic. Add sweet potato, cinnamon, and broth and saute for about 1 minute. Add the kale, salt, and raisins and saute until kale is a darker shade of green and the sweet potatoes are tender, about 5 minutes. Stir in maple syrup. Serve garnished with ground pecans.
